Spicy Feta, Olive Oil & Honey Bites
Desert/healthy snack: Spicy Feta, Olive Oil & Honey Bites
Serving—18 Bites
PJ KABOS Extra Virgin Olive Oil used: Family Reserve High Phenolic Organic—Medium (white bottle)

Ingredients
- 1 package phyllo pastry – 275 grams (9.7 ounces)*
- 12.3 ounces (350 grams) feta cheese
- 1½ cups PJ Kabos Family Reserve High-Phenolic Extra Virgin Olive Oil
- 2 tablespoons chili flakes, or to taste**
- 3 tablespoons white sesame seeds
To Serve:
- Honey, to drizzle
- Black sesame seeds
*The "standard package" of phyllo pastry varies by country. Use the closest size available to the 275 grams used here, adjusting measurements as needed, or opt for a larger package and save the extra phyllo for another meal.
- U.S.: 16 ounces (1 pound/ 454 grams) is the most common size.
- Europe: 250 grams, 275 grams, 375 grams, and 500 grams are common, but 1 kg (1,000 grams) is also widely available.
- Australia & Canada: Usually 375 grams (13.2 ounces) or 450 grams (15.8 ounces) packs.
- UK: Typically 250 grams or 500 grams packs.
** You’ll notice that the recipe calls for two tablespoons of chili flakes—a lot of spice for a Mediterranean dessert (and for many palates!). You may want to start with ½ tablespoon total, evenly distributed across all three sections of phyllo sheets, and adjust upward to suit your taste.


Preparation
Before you begin, allow the phyllo pastry to come to room temperature in its packaging .
Using a fan-assisted oven, preheat to 180°C (350°F).
1) Lightly grease one 12-hole muffin tin and one 6-hole muffin tin with oil (or two 9-hole tins) for a total of 18 muffin with PJ Kabos Family Reserve High Phenolic Organic Olive Oil.

For the filling: 2) Slice the feta into strips about 2–3 cm thick (a little more than half an inch thick).

Assemble the bites:
3) Place the phyllo pastry on your work surface and cut it lengthwise into three equal sections.

4) Drizzle a little oil onto each section, then use a brush to spread it over the top.

5) Sprinkle with chili flakes and white sesame seeds.

6) Place a strip of feta along the long edge of each stack, about 1.5 cm (or half an inch) from the bottom.

7) Fold the edge over the feta and roll it tightly to form a log.


Slice and arrange:
8) Using a sharp knife, cut each log into 6 pieces. From 3 long rolls, you will get 18 bites—these will be your bite-sized Spicy Feta, Olive Oil & Honey Bites.

9) Place each piece into a hole in the muffin tin, with one edge facing downward and the center and other edge facing upward.

10) Drizzle about a tablespoon of oil over each piece to coat the pastry.


Bake:
12) Bake for 35 minutes, or until the pastry is golden and crisp. Let cool for 5 minutes before transferring to a serving platter.

To serve:
13) Drizzle with honey and sprinkle with black sesame seeds.

14) Plop a Spicy Feta, Olive Oil & Honey Bite into your mouth and enjoy!
